A New Culinary Destination in Rabat-Salé

Rabat-Salé has welcomed a prestigious addition to its culinary scene with the opening of Aldabaran, the first restaurant in Morocco by the renowned chef Alain Ducasse. Located on the 33rd floor of the iconic Mohammed VI Tower, Aldabaran is part of the luxurious Waldorf Astoria Rabat Salé. This new dining establishment beautifully harmonizes Ducasse's Mediterranean culinary expertise with the rich flavors and ingredients sourced from Morocco. Leading the kitchen is Morgan Perrigaud, a seasoned chef who has been part of the Ducasse culinary team for several years, bringing a wealth of experience to this new venture.

A Unique Culinary Experience

Aldabaran’s menu is heavily inspired by the culinary traditions of the French and Italian Rivieras, focusing on seasonal produce, vibrant flavors, and meticulous preparation techniques. The restaurant proudly incorporates local Moroccan ingredients, ensuring a unique dining experience that reflects the region's rich gastronomic heritage. Guests can enjoy a variety of exquisite dishes, including stuffed vegetables with poultry and milk-fed lamb, Gambero Rosso paired with ricotta tortellini, and lamb served with Caponata. Notably, Aldabaran stands out in Ducasse's portfolio for its breakfast offerings, which are available from early morning. Diners can indulge in homemade pastries and madeleines, alongside Ducasse's signature Cookpot featuring eggs and mushrooms. Chef Morgan Perrigaud is at the helm of operations, having previously honed his skills in culinary hotspots such as Paris, London, Barcelona, and Doha. In 2022, he joined Ducasse and took charge of the Jiwan restaurant at the National Museum of Qatar. Now, he leads the talented team at Aldabaran, ensuring that each dish meets the high standards expected of a Ducasse establishment.

Spanning approximately 510 square meters, Aldabaran accommodates up to 66 guests. The stunning interior, designed by Pierre-Yves Rochon, merges Art Deco elements with traditional Moroccan craftsmanship, featuring Zellige tiles and artwork from the cities of Fès and Meknès. The expansive windows provide breathtaking views over Rabat, Salé, and the Bouregreg River, extending all the way to the Atlantic Ocean.

The location of Aldabaran is equally remarkable, situated within the 250-meter-tall Mohammed VI Tower, the tallest building in Morocco. The Waldorf Astoria Rabat Salé, which opened in May 2026, boasts 55 luxurious rooms and suites, along with various dining concepts. In this prestigious hotel, Aldabaran proudly serves as the signature restaurant, promising an unforgettable culinary journey for its guests.
